Mini Dark Chocolate Cheesecakes

Not only are they easy to make, but they’re also ready in no time thanks to the magic of air frying. And if you don’t have an air fryer, don’t worry – you can also make these in the oven!
To make these mini cheesecakes, you will need:
8 oz cream cheese
1/2 dark chocolate bar
1 egg
⅓ cup sugar
1 tsp vanilla
Oreo cookies
For the ganache topping:
1/2 dark chocolate bar
1 tablespoon heavy cream
1 tablespoon butter
Fresh fruit (for topping)
First, preheat your air fryer to 325°F. In a mixing bowl, cream together the softened cream cheese and sugar. Then, melt half of a dark chocolate bar in the microwave and add it to the cream cheese mixture. Next, add the egg and vanilla and stir until everything is well combined.
Place an Oreo cookie in the bottom of each muffin pan or cupcake liner and spoon the cheesecake mixture on top of the Oreo, filling each liner almost to the top. Air fry at 325°F for 11 minutes, or until the cheesecakes are set. If you don’t have an air fryer, you can bake them in the oven at 300°F for 20 to 25 minutes.
Once the cheesecakes have cooled, refrigerate them for at least one hour. While they’re chilling, you can prepare the ganache topping. Simply melt the remaining half of the dark chocolate bar in the microwave, add heavy cream and butter, and stir until smooth. Spread a tablespoon of the ganache on top of each cheesecake and add some fresh fruit to finish them off.
