Lucky Charms Cookies

I’m always looking for fun and festive ways to celebrate the holidays with my kids. And with St. Patrick’s day coming up, what could be more fitting than a batch of Lucky Charms Marshmallow Cookies?

These cookies are a fun twist on the classic cereal and are sure to be a hit with anyone who loves cookies or Lucky Charms. Plus, they’re incredibly easy to make, so even if you’re not the most skilled baker, you can still whip up a batch that will impress your family and friends.

 

 

 

  To make these cookies, you’ll start by creaming together butter and sugar until they’re light and fluffy. Then, you’ll add in eggs and vanilla extract. In a separate bowl, you’ll whisk together flour, baking powder, baking soda  and salt. Once you’ve combined the wet and dry ingredients, you’ll fold in the white chocolate chips and the Lucky Charms marshmallows.

 Roll the dough into 1/4 cup size portions and place on a baking sheet lined with parchment paper. Bake at 350 degrees for 10 minutes. Let cool on the baking sheet for a few minutes before transferring to a wire rack. (These can also be cooked in your air fryer! Air fry at 300 degrees for 8 minutes.) 

Store cookies in an air tight container so they keep their soft texture.

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 1 cup white sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 and 1/2 cups Lucky Charms marshmallows

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the white chocolate chips and the Lucky Charms marshmallows.
  7. Using a cookie scoop or spoon, drop rounded balls of dough (1/4 cup portions) onto a parchment-lined baking sheet.
  8. Bake for 10 minutes.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

*Save a few marshmallows to press into each cookie dough ball right before baking for a more festive look!
