Coconut Macaroons

As a busy mom, I’m always looking for new and creative ways to make quick and easy treats for my family. That’s why I love this recipe for air fryer coconut macaroons with a chocolate twist! Not only are these macaroons deliciously chewy and sweet, but they’re also made in an air fryer, which means they’re healthier and faster than traditional baked macaroons.

 

 

 

To make these macaroons, you’ll need just a few simple ingredients: sweetened coconut, sweetened condensed milk, salt, vanilla extract, egg whites, and semi-sweet chocolate. Mix the coconut, condensed milk, salt, and vanilla together in a large bowl, and beat the egg whites until stiff peaks form. Then, fold the egg whites into the coconut mixture, spoon the mixture into rounds on a piece of parchment paper, and air fry until golden brown and set.

 

 

But the real magic happens when you dip the macaroons into melted chocolate! I like to use semi-sweet chocolate for a rich and indulgent flavor, but you can use any type of chocolate you prefer. And if you want to get really creative, try dipping the chocolate in crushed pistachios or other nuts for a fun twist.

Coconut Macaroons

Ingredients
  

  • 14 oz sweetened coconut flakes
  • 3/4 cup sweetened condensed milk
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 2 lrg egg whites
  • 8 oz semi-sweet chocolate chips

Instructions
 

  • Preheat your air fryer to 300 degrees F
  • In a large bowl, mix together the sweetened coconut, sweetened condensed milk, salt, and vanilla.
  • In a separate bowl, beat the egg whites with a hand mixer on medium-high speed until stiff peaks start to form.
  • Fold the egg whites into the coconut mixture.
  • Scoop mixture into rounds and place them on a baking sheet or in your air fryer basket, about 6 at a time.
  • Cook until golden brown and set, approximately 10-11 minutes.
  • Melt the choocolate chips in a microwave-safe bowl for 30 seconds, then stir. Continue microwaving and stirring in 30 second increments, until smooth.
  • Dip the bottoms of the macaroons into the melted chocolate and transfer them to a parchment-lined baking sheet to set. Drizzle some more chocolate over the tops of each macaroon. Let them rest until the chocolate firms up.
