As a mom, finding the balance between satisfying our family’s sweet tooth and making sure they eat nutritiously can feel like a constant juggle. That’s why I’m happy to share my latest discovery: Healthier Chocolate Muffins. These delicious treats are not only packed with rich chocolate flavor, they’re packed with wholesome ingredients that you can feel good about serving to family and friends.

 

Ingredients:
– 1 cup whole wheat flour
– 1/3 cup cocoa powder
– 3/4 tsp baking soda
– 1/4 tsp salt
– 1/2 cup dark chocolate chips
– 2 eggs
– 1/2 cup honey
– 1/2 cup Greek yogurt
– 1/3 cup whole milk
– 1/4 cup olive oil
– 1 tsp vanilla extract
 
 
Directions:
 
1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or by greasing the cups.
2. In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt until well combined.
3. In a separate bowl, beat the eggs and then add the honey, Greek yogurt, whole milk, olive oil, and vanilla extract. Mix until smooth.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
5. Fold in the chocolate chips.
6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
