Cucumber Tomato Salad

Springtime is here, and as a mom, I am always on the lookout for delicious and healthy recipes that my family will love. This cucumber salad is the perfect combination of fresh, flavorful, and easy to make! With juicy cherry tomatoes, avocado, cucumber, and mozzarella pearls, it’s the perfect salad to bring to any springtime gathering or to enjoy on a warm, sunny day.

 

 

 

 

 

Here’s what you’ll need to make this delicious cucumber salad:

 

Ingredients:

 

One English cucumber

One 10-ounce package of cherry tomatoes

One avocado

Half a cup of chopped red onion

2 tablespoons chopped fresh dill

One package of mozzarella pearls

For the dressing:

 

Juice of one lemon

Drizzle of olive oil

Salt and pepper

1 tsp zesty garlic seasoning

Instructions:

 

Start by washing your vegetables and chopping them into bite-sized pieces. 

 

In a large bowl, mix together the cucumber, cherry tomatoes, avocado, red onion, and mozzarella pearls.

 

In a separate bowl, mix together the lemon juice, olive oil, salt, pepper, and zesty garlic seasoning. 

 

Pour the dressing over the vegetables and mix everything together until the dressing is evenly distributed. 

 

Sprinkle fresh dill over the top of the salad for a burst of flavor and color.

  • drizzle olive oil
